In my house, we love eating it for dinner as it is not only healthy but filling too. Loaded with vegetables, flavorful, and tastes absolutely delicious.

There are various varieties of Sevai/Vermicelli available in the market. From all-purpose ones to whole wheat, you can choose from any. We prefer whole wheat as it’s healthier.

The beauty of Vermicelli is that it can be cooked in so many different ways. Sweet Vermicelli cooked in milk and then added sugar and fruits make it a yummy dessert recipe. In addition to this, Vermicelli Cutlets or Railway wale cutlets is another great recipe to try.

  1. In a kadhai, dry roast Sevai/ Vermicelli. You can dry roast them and keep them in an air-tight container too. Use whenever required.
  2. In a kadhi, heat oil. Add jeera, rai, and chopped green chilies.
  3. Add in all the vegetables and cook them on low flame. Once cooked, add in the spices.
  4. Now add the roasted sevai and toss it with the vegetables.
  5. Add in water and cover the kadhai. Let it cook on low flame till sevaiyan gets properly cooked and the water has evaporated.
  6. Garnish with dhaniya patti/coriander leaves and serve hot.
