Nankhatai Recipe | Eggless Indian Biscuits.

Nankhatai is Indian shortbread biscuits or cookies that are made with all-purpose flour, besan, sugar, and ghee. When I was younger, my mother used to make these Nankhatai biscuits at home using a gas oven and we used to love it.

Of course, during those days fancy cookies were not available in the market so this used to make us so happy.

Nowadays, there are tons of cookies/biscuits recipes that are readily available on the internet and we have these super cool gadgets like Microwave/OTG which has made our lives easier and simpler.

Nankhatai is an easy-no fuss recipe that doesn’t require any special ingredients. All the ingredients are available in your kitchen. A perfect recipe to try for your kids. Also, this makes a perfect tea time snack recipe.

These Nankhatai biscuits are super soft, melt in your mouth, and have that biscuit crunch to it. Uff, the entire home smells amazing with the beautiful aroma of freshly baked biscuits. The beautiful aroma of cardamom makes it even more flavourful.

These Nankhatai biscuits can be made in a Microwave, an OTG, or on a Tava. I have made these in a Microwave at Convection mode. Try them and let me know how these turned out.

Instructions
  1. In a mixing bowl or a thali, add in the maida, besan, and sooji. Mix all these well.
  2. To this add baking powder, baking soda, salt, and cardamom powder. Mix everything well.
  3. Now add powdered sugar and mix. At this stage, you can taste and adjust the sugar as per your liking. You can add less or more.
  4. After all our dry ingredients are mixed well. Now we will add ghee. Take ghee at normal/room temperature like the liquid ghee we use at home.
  5. Combine everything together. The idea is to make a medium soft dough so that we are able to make balls/nankhatai out of it.
  6. Knead the dough properly as it makes a smooth dough.
  7. Now divide the dough into 12-13 balls and roll them using your palm. Gently press your thumb in the middle of the Nankhatai giving it a shape.
  8. Decore these Nankhatais with pistachios/almonds/dhoodh masala.
  9. Preheat Microwave at Convection mode for 5 minutes at 150 degrees.
  10. Arrange these Nankhatai on a baking dish/tray and put this tray inside the Microwave on a lower rack.
  11. Bake these for about 15-17 minutes at 150 degrees on a Convection mode.
  12. Once done, cool these down and store them in an airtight container.
  13. Serve it with a hot cup of tea.
