Choco Chip Mini Muffins | Egg less recipe.

*Takes a Mini Muffin and gulps down in one go* – Haha, that’s how tiny these are and tastes absolutely yummy. If you have been following my website, I have posted a Tutti Frutti Coconut Mini Muffins before, these are quite similar to them except here we have added choco chips and made them more chocolate-y 😉

Perfect to serve it to your kids or make them for birthday parties. These are super quick and easy to make. These are eggless and most of the ingredients are easily available in your kitchen. You can make two batches of these mini muffins, one is these choco chips ones and another Vanilla Tutti Frutti ones.

Instructions
  1. In a big thali or mixing bowl. Sieve Flour (Maida), baking powder, baking soda and milk powder. Mix them. Keep this aside. These are our "Dry ingredients".
  2. Now in a large mixing bowl. Take Oil, add sugar and milk. Stir it, till the sugar is melted completely. Now add Vanilla essence, coffee power and cocoa powder to it. This is our wet mixture.
  3. Now slowly add dry ingredients to the wet mixture. Gently mix all together. Make sure there are no lumps.
  4. If required, you can add a little more milk. We want a medium thick flowing consistency of the batter.
  5. Finally add choco chips according to your taste and liking.
  6. Gently fold the mixture and mix it well.
  7. Pour this batter into our muffin cups/ moulds. Make sure to fill only till 3/4th. You can use a tea spoon to fill these muffin cups.
  8. Meanwhile, pre-heat Microwave at 200 degree - Convection - 5 mins.
  9. Place a low rack and arrange these muffin cups in a microwave safe plate.
  10. Bake it on convection at 180-200 degree for 25-30 minutes.
  11. Once 25-30 minutes is over, check it using a toothpick. It should come clean.
  12. You can add more choco chips on top if you like. When you will place choco chips on hot Muffins, it will start melting and give it a gooey feel. {YUM}
  13. Voila! Mini Muffins are ready to serve and eat.
  14. Let them cool down, you can store them any air tight container.
  15. Serve it to your kids and enjoy.
