Tips for making the perfect Tava Pulav

  • Keep your vegetables ready. Chop and dunk.
  • If already planned, make rice before hand so that it cools down and doesn’t break while cooking.
  • If making it instantly, make rice and then spread it in a thali so that it cools down.
  • You can use any vegetable of your choice.
  • Make it with butter, it elevates the recipe to the next level.

  1. Wash and soak Basmati rice for half an hour to 45 minutes.
  2. Cook the rice like we normally do. Boil water in a vessel, add a pinch of salt and add the rice. Let it cook. Drain the water. Cool it down and keep it aside.
  3. Heat oil + butter in a tava or a frying pan. Add in jeera, whole dried red chili, and garlic. Saute it for a minute. Now add in the onions and cabbage.
  4. Add in the tomatoes and cook till it becomes mushy. Add in the masala and cook it till it starts releasing oil.
  5. Now add in the rice and gently toss it. Be careful as we don't want to break the rice.
  6. Adjust the salt, add in lemon juice and Paneer cubes. Toss everything.
  7. Garnish with fresh coriander leaves and serve it with Raita. Enjoy!
Recipe Notes
  • Add vegetables of your choice. 
  • You can add capsicum, bell peppers, and broccoli too.
  • Instead of deep fry, shallow fry the Paneer cubes. 
  • Adjust the salt and spicy-ness according to taste and preference.
