I am someone who loves having Soup for dinner and I try to incorporate different soups into my diet. Love the variety, love the flavors, and what’s not to love – having a hot cup of soup on a chilly winter evening. Bliss!

Soups are a great way of adding vegetables to our diet. This is a perfect recipe to give to your kids as well. This is the first time I have made this in my life and OhMy, it was delicious. I was totally surprised by how creamy, yummy, and comforting it was.

You will find so many recipes on the internet. Usually, people make Cream of Mushroom soup wherein heavy cream is added to make it creamier and yummier but I have skipped the cream as it wasn’t available and I wanted to make it healthier too.

Nonetheless, this recipe turned out FANTASTIC and I am not bragging! You gotta try this asap.

  1. In a nonstick kadhai, add some ghee and roast 4-5 mushrooms for garnish. Take it aside.
  2. In the same kadhai or pan, heat oil. Add garlic and onions. Sauté till garlic is cooked and onions are a little brown.
  3. Now add the mushrooms and sauté them till they become a little brown and cooked. Add in whole wheat flour. Mix
  4. Now add in milk and let it cook or take a boil. Add in white pepper powder, black pepper powder, salt, and red chili flakes. Cook all this for 2-3 minutes.
  5. Once cool down, blend this using a hand blender. You can blend it to make a smooth soup or have a little bite of mushroom. This is up to you.
  6. Cook the blended soup again with some water. Adjust the consistency and the salt/pepper.
  7. Once done, serve it hot and garnish it with garlic oil, roasted mushrooms, red chili flakes, and coriander leaves.
  8. Have it with garlic bread or bread croutons. Enjoy!!!
