Aloo Baigan ki sabzi is a delicious, easy-to-make – 10 minutes recipe. A perfect recipe to try when in a jiffy. North Indian style sabzi is made with a combination of vegetables. Aloo, Baigan, and tamatar – mixed with spices and works as a great accomplishment with Rotis/parathas.

Generally in North India, we make a single vegetable but this one is a combination of three vegetables. Also, this is a perfect recipe when you have less number of brinjals, thus by adding aloo you can increase the quantity.

I absolutely love this sabzi as it is spicy, loaded with flavors, and can be made in 10 minutes. Who doesn’t love sabzi that is quick and easy to make. Right?

Aloo Baigan Sabzi
Aloo Baigan sabzi is a north Indian recipe made of potatoes, brinjal, and tomatoes. Few spices and the sabzi is ready in 10 minutes. A perfect recipe for Lunch or for the tiffin. Have it with roti or paratha.

  1. Wash and chop potatoes, brinjal, and tomatoes.
  2. In a kadhai, heat oil. Add hing, jeera, rai, and green chilies.
  3. Add potato and brinjal. Let it cook on low flame. Sauté in between.
  4. Once they are cooked, add in the spices. Haldi, lal mirch, garam masala, amchur powder, dhaniya powder, and salt.
  5. Now add the tomatoes. Cover it and cook. Mix everything together, now add a little water. It will give a beautiful Tari. Cook for another minute.
  6. Garnish with dhaniya. Serve it with roti or parathas. Enjoy!
