
Winter is all about fresh, green and leafy veggies. I absolutely love Winter because it’s the season where you can experiment with vegetables. One of those leafy vegetable which we all love is Spring Onion.
Spring Onions are widely used in making Chinese dishes or it is used as a garnish. One of my favorite recipe of all the time is Hare Pyaaz and Aloo ki Sabzi. The main hero in this recipe is Hara Pyaaz, but just to give it a bit of texture and volume, I have added aloo too. You can make it without aloo/potato, its completely optional.

Yummy, full of flavors and spices; Hare Pyaaz ki Sabzi is loved by all. You can have it with Parathas or Rotis.

- 250 gms Spring Onion / Hare Pyaaz
- 1 / PotatoAloo
- 2 tablespoon Oil
- 1/2 teaspoon Cumin seeds / Jeera
- 1 Green chili - small (chopped)
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Chili powder Red
- 1/2 teaspoon Amchur Mango Powder /Dry
- 1/2 teaspoon Garam Masala
- Coriander leaves - for garnish
- to taste Salt

- Wash, peel and cut potato in dices.
- Wash and finely chop spring onions.
- Heat oil in a Kadhai.
- Add cumin seeds and green chilies on a low flame. Let the cumin seeds splutter.
- Now add diced potato and chopped spring onions and cook them on a low flame till they become soft. Keep stirring them in between.
- Add turmeric powder, red chili powder, amchur powder, garam masala, and salt.
- Stir and mix well.
- Switch of the gas and garnish it with fresh coriander leaves
- Serve it with parathas or rotis.
- Your Hare Pyaaz and Aloo Sabzi is ready.
