Instructions
  1. Wash and soak kale chane over night. The next morning, discard the water and put fresh water. Pressure cooker it for 5-6 whistles on low flame or till chane becomes soft and cooked.
  2. Wash and soak rice for at least half an hour.
  3. In a pressure cooker or a lid Handi. I have used a Lid Handi as shown above. Heat oil, add jeera, hing, Tez patta, and dried red chili. Sauté for a minute.
  4. Add chopped onion and cook it till it becomes soft and transparent. It’s time to add tomatoes and cook them too.
  5. Once the onion and tomatoes are cooked, add all the masala. Red chili powder, turmeric powder, garam masala, chhole masala, and salt. Sauté.
  6. It’s time to add boiled kale chana. Cook the boiled chana for 1 minute in the masala.
  7. It’s time to add soaked rice. Drain the water and add rice to the mixture. Toss it gently with hands. Do not over toss it otherwise the rice will break.
  8. Add water and close the lid. Let it cook on low flame for 10-12 minutes or till rice gets cooked properly.
  9. Else, pressure cook it for 2 whistles on low flame.
  10. Garnish it with chopped coriander leaves and serve with Raita.
  11. Voila! Kale Chane ki Khichdi is ready to serve.
