Zucchini Mini Bites | Party Starter | Zucchini Bruschetta.

Zucchini, those who don’t know is a vegetable that looks like cucumber which is available in green and yellow color and is full of health benefits. Zucchini is a fancier version of cucumber you can say but tastes different and exotic. The first time I saw Zucchini, I was eager to try as it was new to me. There are so many recipes available online but to be honest I choose to try it with an easier one. Me and Ankit, we got Zucchini along with Bruschetta mini toasts from Hypercity, Bhopal. These are available online as well as super bazaars.

I have used Bruschetta mini bread which is basically mini toast which you can eat with tea or you can add any topping of your choice. If you can’t find bruschetta bread, you can use normal bread or can use a toast too. It’s all about experimenting, right?

Coming back to Zucchini health benefits. It helps in weight loss, protects the cardiovascular system and is full of nutrients.

I have added tomatoes, onions, olives, zucchini to this recipe. You can add corn or paneer too. It totally depends on your taste. These are Mini open toasts/ bruschetta you can say.

Zucchini Mini Bites are perfect for your Kitty party, these are great Party starters and will be loved by your kids as well.

Mini Bruschetta topped with veggies and cheese. Mini bites that are perfect for your kitty party starter or you can serve it to your kids.

Ingredients
  • 1 Packet Bruschetta Mini bread/toast You can use normal toast or use normal bread.
  • 1 number Zucchini peeled and thinly sliced.
  • 1 number onion Finely chopped
  • 1 number small Tomato finely chopped
  • 1 number small capsicum Finely chopped
  • 8-10 number Black Olives chopped. (I have used the canned ones)
  • 1/2 teaspoon Red chilli flakes
  • 1/2 teaspoon oregano
  • 1/4 teaspoon Ajwain/ Carom Seeds
  • 1/2 teaspoon Tomato Ketchup
  • few basil leaves
  • 2 cubes cheese Grated
  • 1 teaspoon olive oil
  • salt to taste

Instructions
  1. In a kadhai, add olive oil ( you can use normal oil as well).
  2. Add ajwain, crushed basil leaves and onions. Sauté it for few minutes. We want to have the crunch of onion.
  3. Add tomatoes, capsicum, zucchini, olives and toss it well. Cook for a minute or so.
  4. Add red chilli flakes, oregano, salt and tomato ketchup. Toss it and switch off the flame.
  5. Take the brushcetta mini toast, apply a generous layer on it and top it with cheese. Cook it for 1/2 minute or till cheese melts. You can cook it in a microwave or on a non stick pan.
  6. If you are using normal bread, you can either toast it first and then apply the masala and cheese. Or you can make it like an open toast.
  7. Voila! Enjoy your mini Zucchini bruschetta.
