Vegetable Mini Oats Uttapam

Ingredients
For Batter
  • 1cup oats oatsquick cooking / rolled
  • 1/2cup sooji rava/
  • 1/2cup besan
  • 3/4cup dahi
  • 1/2cup water
  • 1/4teaspoon eno salt/ fruit
  • to taste salt

Instructions
  1. Take oats in a bowl. You can use quick cooking oats or rolled ones.
  2. Add besan, sooji, dahi and salt to the oats.
  3. Mix all this well and add water so that everything gets soaked in water. We want this to rest for about 15-20 minutes. The idea is everything should get soaked in water and dahi.
  4. Once 15-20 minutes is over, put this into a blender or mixer grinder jar an make a fine paste. It will look like your dosa batter.
  5. Keep this batter aside for few minutes till we chop the veggies.
  6. Wash and chop tomatoes and capsicum into dices or small pieces.
  7. If you are using fresh corn, take out the corn kernels and steam it for 2-3 minutes with some water. You can use american corn too.
  8. Chop green chilies too. You can avoid if making for kids.
  9. Now add the masala to the veggies. Add salt, red chili powder, jeera powder and chaat masala. You can add this according to your taste.
  10. Mix everything well. This tastes yum!
  11. Now take your batter add water if required. It should be of medium uttapam consistency. It should neither be too thick nor too thin.
  12. Add eno or fruit salt
  13. Mix it well. You can add baking soda too, but I have avoided that.
  14. Take any non stick tava. I have this mini uttapam pan.
  15. Heat the pan on low heat and grease it with a little oil.
  16. Pout batter into these and let them take the shape. You can make a big uttapam or these mini ones.
  17. You will see these bubbles forming on them. Looks like rice uttapam, right? 😉
  18. Once you see these bubbles, add veggies and pour a little oil on the sides and on top of the veggies.
  19. Cover it with a lid and let it cook on low flame for 2-3 minutes. Flip them and cook from the veggie side. Look how gorgeous these are looking.
  20. Once done, switch off the gas and take them out.
  21. Serve it hot with coconut chutney or tomato ketchup.
  22. Yummy Vegetable Oats Uttapam is ready.

Notes :

  • You can make the batter before hand and store in refrigerator in case you don’t have time in the morning.
  • You can add lemon juice instead of dahi
  • You can add any vegetable of your choice.
