Vegetable Masala Khichdi

As soon as the name Khichdi pops up – we all start making faces and don’t want to eat it unless we are sick and we are forced to eat, either by Mom or Doctor. In India, whenever someone is sick, Moong Dal Khichdi is served to them as it is recommended by Doctors.

Vegetable Masala Khichdi is One Pot Meal and it tastes absolute yum. If you try this recipe, you will fall in love with the simplicity of the dish and it is power packed with nutrition. For those who want to eat something healthy yet tasty, this is the perfect recipe for them.

 

You just require a few basic ingredients and can make it in minutes. It’s filling and it the perfect way to make your kids eat veggies. You can add any vegetable of your choice but I have used the normal ones available at home.

Instructions
  1. Take spilt and husked Moong Dal and Rice, mix them in a bowl and wash them thoroughly under running water. Make sure you wash them at-least 3-4 times.
  2. Soak the Moong Dal and Rice in water for 30 minutes.
  3. Chop tomato and carrot in dices. I have used frozen peas and carrot, if you are taking fresh ones, boil peas and carrot first.
  4. Heat pressure cooker and add ghee to it.
  5. Once the ghee is hot, add cumin seeds, hing, chopped green chili, curry leaves and crushed ginger. Saute them for few seconds.
  6. Now add all the tomatoes, carrots, peas and stir it well. Let it cook for a minute.
  7. Once the vegetables are soft, add turmeric powder and red chili powder. Saute for a minute.
  8. Now add the soaked Moong Dal and Rice and add 6 cups of water.
  9. Mix everything well, lastly add salt to taste and mix well.
  10. Close the lid of the pressure cooker and wait for 5-6 whistles on high flame.
  11. Once the pressure cooker is cool enough, open it and at this time you can check the consistency, if you want it more runny, you can water to it and give it a boil.
  12. Lastly, garnish it with fresh coriander leaves and serve it with ghee (optional)
  13. Serve Hot with tomato and onion salad and papad.

Notes :

# Instead of cup, you can measure the ingredients by a katori.

# Instead of split moong dal, you can go for green moong dal too.

# You can add water according the consistency of the khichdi you want.

# You can use any vegetable of your choice. Can add onions and potato too.
