Vanilla Sponge Cake in pressure cooker | Eggless Cake Recipe

Vanilla sponge cake is the easiest, yummiest, and my most requested recipe. It’s eggless, it’s moist and it’s super yummy. Not bragging but I have made like hundreds of these till now and everyone simply loves it! 

Since this Vanilla Sponge Cake can be made in a pressure cooker, anyone who doesn’t have a Microwave can bake it too. In this recipe, I am sharing a step by step process of how you can bake an eggless Vanilla cake at home.

Baking Essentials :

For people who are beginners in baking like me. It’s very important to get the measurement right. Some are the essential products which you will require for any type of baking are :

  1. Measurement Cups: Now, these cups are for measuring dry or wet ingredients. These come in a set of 4. The biggest cup is of 200gms, followed by 100gms, 50gms and then 25gms.
  2. Measurement Spoons: These are used to measure baking soda and baking powder. Whenever you measure Baking soda and Baking powder, fill them in the spoon and then level it with your fingers so that you don’t end up adding extra.
  3. Spatula and Oiling brush – This is optional but comes really handy
  4. Aluminum Moulds for baking:  You can even buy a set of 3. These work great for baking Cakes for Birthday parties.

Instructions
  1. In a big thali or mixing bowl. Sieve Flour (Maida), baking powder, baking soda and milk powder. Mix them. Keep this aside. These are our dry ingredients.
  2. Now in a large mixing bowl. Take Oil, add sugar and milk. Stir it, till the sugar is melted completely.
  3. Now add Vanilla essence and coffee power to the wet mixture.
  4. Now slowly add dry ingredients to the wet mixture. Gently mix all together. Make sure there are no lumps.
  5. If required, you can add a little more milk. We want a medium thick flowing consistency of the batter.
  6. Take an aluminium pot or mould of your choice. Grease it with the help of oiling brush.
  7. Dust it with little maida. We just want a very thin layer of Maida, so that the batter doesn't get stick to the mould.
  8. Now Pour the mixture into the mould.
  9. Take a Pressure Cooker, put the mould inside. Cover the lid without the nozzle.
  10. Bake it on low flame for about 40-45 minutes. Keep an eye on it. Do check it in between around when 30 minutes are done.
  11. Once the cake is baked, take a knife or a toothpick. Do the knife test, if it comes clean; means the cake is ready and baked to perfection.
  12. Once cool, take it out from the Pressure cooker. Slice it down and munch it away..! Don't forget to share it with your friends, family, adosi and padosi 😉
  13. Tadaaaa!! Easy-Peasy Cake is ready! 😀

Notes : # You can add tutti-frutti to give a little color to your cake # Instead of vanilla essence, you can add butterscotch or any other essence of your choice.
