Vanilla Ice cream | Basic Eggless Ice cream | Step-by-Step Recipe

Ice creams…Who doesn’t love ice creams? Since Summer has officially arrived. This is the perfect time to make Ice cream at home. Yes, you can make ice cream at home and not using an ice cream maker. You just need a good electric beater aka double beater and few ingredients.! 😉

Making Ice cream at home might sound as a lengthy/ tiring and boring job, but trust me, this is a very easy recipe and if I can make it, anyone else can make it too. This is the basic Vanilla Ice cream, if you nailed this one, you can make any ice cream of your choice.

With the same basic process, you can make any flavor/ fruit ice cream at home.

Soft, melt-in-your-mouth, creamy and oh-so-yummy, Ice creams are loved by all and if we can make it at home, the joy is beyond words!!!

With 1/2 Kg milk, you can easily make 2-3 containers of Ice cream and can play around with flavors. Generally, I make one container of Vanilla Ice cream, that can be used for making Cold coffee or you can have just like that with Hershey’s Syrup and make 1 batch of Butter Scotch and 2 containers of Chocolate, which my brother loves to bits.

In this recipe, we will be making just the Vanilla one. I will share the Chocolate and Butter Scotch one, in the next posts.

Before we proceed, keep measuring cups and measuring spoons handy, as we need precise ingredients.

  • 1/2 kg Milk : ( I have used Amul Gold )
  • 2 cups Cream Cream / Whipped : ( 400 gms of measuring cups )
  • 4 tablespoons Milk Powder
  • 6 tablespoons Sugar
  • 1/4 tea CMC Powder : spoon ( measuring one )
  • 1 Vanilla Essence tea : spoon

  • 4 tablespoons Milk Powder
  • 6 tablespoons Sugar
  • 1/4 tea CMC Powder : spoon ( measuring one )
  • 1 Vanilla Essence tea : spoon
Instructions
  1. In a big bowl or vessel, take milk. (We want raw milk and not boiled)
  2. Add Milk powder and stir it to avoid lumps.
  3. Now add sugar, GMS and CMC Powder according to measurements
  4. Mix everything well.
  5. Remember all the ingredients we are adding to raw milk and not to boiled one.
  6. Once mixed, now put the vessel on stove/gas.
  7. On full flame, keep stirring the milk till we get one boil. The trick is to keep on stirring the milk the entire time. Do not leave it till we get one boil.
  8. Once one boil has come, lower the sim to the lowest flame and stir it to exact 2 minutes. Have an eye on the watch and stir for exact 2 minutes. Switch the gas off.
  9. Keep on stirring once the flame is off.
  10. We want to cool down our milk by stirring it with a spoon.
  11. You can switch on the fan and stir it or you can place a big bowl of water under the vessel and stir it to cool it down.
  12. The idea is we don't want malai to get frame on milk. So keep stirring it until the milk comes back to normal temperature.
  13. Once milk is cool enough, pour it into aluminum mould like this.Cover it with aluminum foil and keep it in fridger for at least 12-15 hours.
  14. So this is the basic ice cream base we have made. With the same base you can make any ice cream of your choice.
  15. Vanilla Ice cream : Let's get started with "How to make Vanilla Ice cream or the Basic Ice cream.
  16. After 12-15 hours this is how our base will look.
  17. Whip 1 cup ( 200 gms ) of Tropolite cream and keep it aside. Use a double beater and whip the cream. 1 cup of cream will make 2 cups of Whipped cream.
  18. In a big bowl, take our base. The trick is we want our base straight from the fridger and we do not want a melted base.
  19. With the help of double beater beat the base for 10 minutes. It will melt down and will become fluffy.
  20. Add our whipped cream ( 2 cups ) to the whipped milk base and whip it again.
  21. The entire mixture will become very fluffy and soft.
  22. Add Vanilla essence and mix.
  23. Pour this into air tight container, you can use tupperware. Place an aluminum foil and cover it with the lid.
  24. Put it into fridger for 6-7 hours or more. You ice cream is ready to eat and serve.
  25. Scoop it down and serve it with Hershey's Chocolate Syrup or sprinklers of your choice or can have it just like that! 😉

Important Notes

  1. Use full cream milk. You can use any, I have taken Amul Gold.
  2. I have used Tropolite Cream, which is used for cakes & ice creams. This comes in liquid form, once beaten, it becomes whipped and fluffy.
  3. CMC & GMS Powder is easily available in any departmental store
