Strawberry Muffins | Christmas Special

Strawberry and Vanilla is match made in heaven. These muffins are Oh-so-Yummy, Gooey and absolutely delicious. If you are following my blog for a while, you must know by now – Baking is love for me. I absolutely love the idea of Baking delicious, easy and something which makes my taste buds go – Uh-lalaaaaa..!!

This is the first time I have tried Vanilla Muffins with Strawberry. These fresh-juicy-yummy Strawberries adds another dimension to the Muffins.

As Christmas is round the corner, in-fact just a day away. I thought why not introduce something which is easy to bake and doesn’t take much time. And trust me, these tastes super yum.

I have learned this recipe from one of the amazing Baker I know. She is truly an inspiration and I am really thankful to her for sharing her recipe. She is Garima from CafΓ©Garima. Do check her recipe on : Fresh Strawberry Jammy Tea Cakes. Trust me you will go Gaga over this. So I have adapted this recipe from her’s. Though mine is in no comparison to what she has made. Still, I have tried πŸ˜€

  1. Sieve Maida and Baking powder in a thali.
  2. Take Butter in a big mixing bowl. Butter should be in normal room temperature and not melted. The key is to use soft butter and not melted one. I have used normal Amul Butter.
  3. Add Powdered sugar to it.
  4. With the help of a double beater. Blend till it gets creamy and fluffy. It will take around 3-4 minutes. Do not over mix other wise, it will start leaving ghee, which we do not want.
  5. Now add milk and Curd to it. Mix it with the help of double beater.
  6. Now add Vanilla essence and mix.
  7. Finally add Maida & Baking powder mix in batches and incorporate everything together. Use a spatula to mix everything together.
  8. The mixture will be thick and not too runny.
  9. Take Muffin moulds and arrange them in Muffin tray.
  10. Fill it with the mixture. Do not fill more than half.
  11. Add Strawberries on the top.
  12. Pre-heat the Micro-wave at 200 degree for 5 minutes.
  13. Bake them in convection for about 25-30 minutes at 180 degrees.
  14. Check done-ness by inserting a toothpick in the center of the Muffin. It should come out clean.

  16. You can dust icing sugar on the top.
