Sooji Idli | Instant Rava Idli | Breakfast Recipe.

Sooji / Rava Idli is one of the most common breakfast we get in South India. If you are a huge South Indian cuisine fan like me, you surely gonna enjoy this recipe. At times we want something that can be made in a jiffy and doesn’t require that much efforts.

This is my Mom’s recipe as she prepares/roasts Sooji with few ingredients in advance and store in an airtight jar. Whenever you want to make just add curd, water add fruit salt {eno} and you can make in minutes.

Instant and super easy to make. Perfect for breakfasts or when you have guests coming over for tea, you can serve it as an evening snack too. Serve it with fresh coconut chutney or sambhar. In my Nani’s place, they serve it with Aloo sabzi and Coconut chutney.

  1. Heat ghee in a kadhai, add mustard seeds, urad daal and chopped cashew nuts. Roast all of these on low flame for few seconds.
  2. Add sooji and roast it for another few seconds and switch of the gas. The idea is not to roast it much, it should not change colour and it should be this hot that you can take sooji in your hands.
  3. You can store this sooji mixture in an air tight container. You can store even a bigger batch of Sooji before hand.
  4. In a big mixing bowl, take roasted sooji add curd, water and salt. Let it rest for 5 minutes.
  5. Mix it well. Now add Eno fruit salt and quickly mix it well.
  6. Grease Idli container with oil and pour this mixture.
  7. Pour little water in the Idli container and steam Idlis for about 12-15 minutes on high flame.
  8. Idlis should cook properly and you can even do the knife/toothpick test.
  9. Serve it with a dollop of ghee on top. Garnish it with coriander leaves.
  10. Serve it Coconut Chutney and sambhar.
