Sabudana Khichdi is a popular vrat recipe. It’s a no onion and no garlic recipe. It can be serve as a tea time snack also. Easy to cook and can be made by anyone.

- 1 cup Sabudana Sago /
- 1 Potato (Boiled, peeled and cubed)
- 1/2 teaspoon Green chili (Finely chopped)
- 1/2 teaspoon Cumin seeds
- 1 - 2 teaspoons Peanuts (roasted and crushed)
- 1/4 teaspoon Black pepper powder
- 1 tablespoon Ghee
- 1 - 2 teaspoons Lemon juice
- to taste Salt (Sendha namak)
- Pomegranate seeds : for garnish
- Coriander leaves : for garnish

Instructions
- Wash sabudana till water clears. Soak in water just enough to immerse the sabudana for about 1-2 hour.
- Drain in a colander, then spread over a thick cloth. It is important for the water to drain out well. The sabudana should be soft and fluffy.
- Heat ghee in a non-stick pan, add cumin seeds and green chilies. Let it splutter.
- Add boiled-diced potatoes, saute them well. Cook for a minute.
- Add roasted and crushed peanuts. Mix it well.
- Finally add sabudana, salt, black pepper powder and lemon juice. Mix it gently.
- Garnish with coriander leaves and fresh pomegranate seeds.

Handy Notes :
As the sabudana cooks, it turns transparent. Make sure all the sabudana gets cooked properly.
It is very important to soak sabudana for at-least 1-2 hours.
