As the name suggests, its a greeny healthy vegetable recipe. Lots of vegetables in a gravy full of flavors. Enjoy it with Naan or Paratha.
In a pressure cooker take capsicum, cauliflower, cabbage, carrots and peas. Add 2 cups of milk + 1/4 tsp salt. Pressure cook the vegetables for one whistle or you can boil the vegetables in microwave for 7-8 minutes.
In a mixer, take mint leaves, coriander leaves, green chilies, ginger paste, Onions, tomatoes, dahi, garam masala, cumin seeds, cardamom pods, whole black pepper and Cashew-nuts. Blend them to make a fine paste. Keep aside.
Heat butter or ghee in a pan, add the above masala (step#2). Cook it on low flame for about 5 minutes.
Add the pressure cooked vegetables to the masala. Mix them well. Cook it on low flame for 5 more minutes.
Add salt to taste and grate cheese. Garnish with mint leaves and tomato flower or slices.
Handy Tips :
# Instead of fresh mint leaves, dried mint leaves can be used.
# To make the dish more rich in taste, you can add paneer also.
# As its a green colored sabzi, we are not putting turmeric powder.
