Pav Bhaji is one of the most popular street food in Mumbai (Maharashtra) and needs no introduction. Those who don’t know – pav is an Indian bread and bhaji is mashed vegetables cooked with spice powder.
The vegetables that are usually added to pav bhaji are cauliflower, potatoes, carrots, peas, capsicum and french beans, but you can add cabbage, onions and tomatoes too. Pav-Bhaji is one of the healthiest (not taking butter into consideration) and easiest way to make your kids eat Vegetables. As Bhaji is mashed into a semi-thick puree, kids won’t even recognize which vegetables they are eating 😛
To make your Pav-Bhaji more fancier and yummy, I have decide to go with Cheese Pav-Bhaji and trust me Cheese can do wonders and can add flavors to your dish. Its completely optional as you can avoid cheese.
Also I have made it No Onion – No Garlic.
Lets get started.
Cheese Pav Bhaji
Prepare all the veggies. Cut, Chop and grate them and keep them aside like this.
Dry roast coriander seeds and dry red chili on a tava. Once cool down, grind them to make a fine powder. It adds flavor and aroma to the dish.
Take a heavy bottom Kadhai. Put Ghee/ butter on a low flame. Add ginger and green chili, saute for a while. Then add Capsicum, carrots, cabbage and peas. Stir them on a low flame.
Add mashed potatoes and tomato puree. Keep stirring them till the veggies are cooked.
Now add all the spices, including the dry roasted mixture.
Add salt according to taste, don't add too much as butter and cheese already have salt in them.
Add water and mash it properly, so that the veggies are combined together.
Grate cheese and serve it with an extra dollop of butter.
Serve it with butter toasted pav and lemon slices.
